My mom wants to Know if she cab book two different rooms next to each other.

Hi Aaron!  Please let your mother know that she can indeed request two rooms together and she can do that when making her reservations.  They can both be in her name or she can put one in another name even if she is paying for both. We do this all the time!

About four days before your arrival date please have her call the resort or fax the resort the request to have the two rooms together. It is at this time when they do the room assigning so you don't want to do it too early where they might misplace the request.

Also please note the terminology when making the request.  Connecting rooms will mean you wish for two rooms where you can move between them via in inside door.  Adjoining rooms means they will be next to each other but you would have to use the hall door to move from one to the other.  Please remember that Disney can not guarantee your request but from personal experience we know they will do everything they can to make the magic happen for their guests.
