    Hi, Laura!

    This is a great question!

If park hours have not yet been released and you are approaching your 180 day (plus 10) prior to check-in mark, then I would go ahead and book all of your reservations based on what has been posted at that time. Should things change (they do) or be added (i.e. Fantasmic! Dinner Packages are posted) then you can make a new reservation, if needed and cancel the old one.

In general, the most popular character breakfasts, such as Cinderella's Royal Table, will begin serving regardless of park hours, so there's no need to wait; Guests with early morning reservations are able to get into the parks via their reservations.

For your itinerary, first make a list of all of your top choice Table Service restaurants, then note where they are located. Try to spread out your park visits so that you don't, for example, spend three days in a row in the same park; it's fun to switch it up from day to day, so that you have time to really plan on what you want to see that second time you get to a particular park. Also, be sure to place a later morning or a shorter day after a late night. For example, if you stay up to see any of the evening fireworks, head to Animal Kingdom the next day, as that will surely be an earlier evening. You can head back to your resort to nap, swim and relax that afternoon / evening.

For specific itinerary tips, send another question with your dates of stay and favorite characters / foods; I'd be happy to help!
