With a young child I think you can see enough of the Animal Kingdom from 8 a.m. until 1 p.m. to make it worth a visit. Go directly to the safari in Africa in the morning. Then fit in the other attractions that you are interested in prior to 1 p.m. I would take a bus at 1 p.m. to the Contemporary Resort for your meal with Chef Mickey. Your meal is likely to take about an hour. Late afternoons at the Animal Kingdom are very worthwhile because most of the crowds have departed. If you'd like to return to see a show or catch any attractions that you missed, I think you'll be happy with the low crowds. Otherwise, head back to your resort for a relaxing swim!
