Sounds like you have a lot to celebrate and Disney is the perfect place to celebrate them all! If you're staying at a Disney Resort Hotel, be sure to request "1st Visit" and "Happy Birthday" buttons. If you're staying off property, you can visit Guest Relations in any of the theme parks and they will be happy to give them to you.
I'd recommend getting there when the Magic Kingdom opens and make your first stop to meet Mickey in the Town Square Theater as you enter the park. From there I'd head to Buzz Lightyear's Space Ranger Spin in Tomorrowland. Kids that age love that ride and its a great first ride because they take your picture on the ride which makes a great keepsake.
Our family loves to celebrate birthdays at a
character meal or dinner show. We also love dinner at 'Ohana. Dining reservations can be made beginning 180 days prior to your trip but you can try calling 407-WDW-DINE to see what is available during your stay.
