is there a map anywhere that shows where the restaurants are located in the parks? Also, what happens when a dark ride gets stuck, do lights come on,one more thing, is there a store at the resorts or downtown disney that sell disney scrapbooking supplies?

Hi Melissa, you can find a map of the restaurants through a quick Google search of "restaurant maps of Walt Disney World" and select the Frommers.com match (the second choice when I searched).  It will lead you to a restaurant page with a map link at the bottom of the article.
Would you believe I've been on a handful rides that have broken down while I was riding?  Sometimes the ride was set back in motion; other times guests were actually escorted out by cast members!  So to answer your question, if any ride pauses or becomes inactive, announcements are made immediately notifying guests about the delay and eventually the lights do go on.  This actually just happened to 4 of us on the Moms Panel during our training while we were waiting in line for Space Mountain; I have lots of pictures of the ride with the lights on!
And finally, at Downtown Disney there is a store called the Wonderful World of Memories that is filled with scrapbooking supplies; smaller quantities of supplies are sprinkled throughout other stores at WDW.
