There are so many wonderful restaurants at Walt Disney World, so it's no wonder that you had a hard time narrowing your choices down!
Now, regarding your
Dining Plan, you cannot, unfortunately, use Quick-Service entitlements at Table-Service restaurants. Of course, should you wish to simply pay out of pocket for those additional Table-Service meals, you are welcome to do so. If you'd like to simply stick to those meals which are covered on the plan, though, you are going to have to choose.
I suggest that you prioritize which of your reservations you'd like to keep, perhaps based on which restaurants' reservations are tougher to get, which restaurants coincide with park hours or additional activities, if you've planned any. I would also consider keeping those reservations where the items on the menu are more expensive than the others. (You might as well maximize your Dining Plan dollars by eating in the pricier venues while you're on the Dining Plan...after all, you pay the same price for the plan, whether you decide to have a burger or filet mignon as your entree at a Table-Service restaurant.)
There will always be one more restaurant which you just couldn't sample on most Walt Disney World trips, so perhaps those which had to be dropped from your list this trip can make it to the top of the list for your return! :-)
