Hoop-Dee-Doo Musical Revue was also on my list, and I just recently got to experience it! The food is incredible, and I'm still raving about their cornbread. I know you will love the entertainment; it is a hootin' good time that even my infant enjoyed (despite sleeping through most of the first act).
Speaking of my infant, in my rush and excitement to secure my reservation, I left her off my reservation, so I have firsthand experience with your situation. In this situation, the best thing to do is reach out to a Cast Member in dining at 407-939-3463. There is no guarantee, but if additional space is available to add your other Guest, they can make that addition for you. To answer your second question, yes, you are seated at your own table and not dining with a solo diner. The reason you may not be able to add a Guest despite having room at your table is due to fire codes and capacity restrictions. I learned this when fixing my "oopsie" of forgetting my baby on reservations. She wasn't eating the meal or using a seat, but she counts as a person towards the dining location's capacity, so she has to be accounted for safety.

Disney's Minnie Van Service. Getting to Hoop-Dee-Doo can be quite the trek, especially if you drive there (you must take a Walt Disney World Resort bus from the parking lot). With Minnie Van service, your friendly Cast Member will drive you right to the hostess check-in stand and save you valuable transportation time. My final tip is to remember to save room for dessert; I'm generally not a fan of strawberries, but that strawberry shortcake is outstanding!
