    Made reservations in February, at Grand Floridian Nov 12-18. Tried to make dining reservations first day I could and my first 5 or 6 choices were already unavailable for the entire week I'm there. Would it be a better time to go in the middle of January,

    Regardless of the time of year of your visit, Disney dining reservations often are booked solid at exactly 180 days out for the most popular restaurants.  I recommend that you secure reservations at other restaurants that appeal to you at this point.  I also suggest that you call (407) WDW-DINE frequently to check for openings. Cancellations do occur, and you may get lucky.  If dining is your number one priority, then you might consider booking a trip so that you can call for reservations exactly at the 180 day mark.  Even then, however, there are no guarantees you will obtain the reservations you are looking for.  Rest assured, your trip is sure to be fantastic no matter what you decide.
