I just made my reservations and I am so excited! We will be staying for 8 days and 7 nights. We purchased the base tickets for 7 days. We also purchased the dining plan. Does this mean that we will get 8 of each kind of meal per day?

I can completely relate.  I get so excited when I make a new WDW reservation.

The dining plan meals and snacks are based on how many nights you are staying.  It sounds like you are staying 7 nights, so on the Disney Dining Plan you would get 7 snacks, 7 counter service meals, and 7 table services meals per person for the duration of your vacation.  You can use your credits from the time that you check-in until midnight on the day you check-out.

You may want to look into upgrading your 7 day base ticket to 8 day base ticket.  I believe the cost difference is less than $5.

Enjoy you vacation planning and visit the moms panel again if you have any more questions.
