I noticed that you haven't included a day for Disney Studios...in my opinion, it's a must-not-miss for a 6-year-old boy: Jedi Training, Indiana Jones and lots of Pixar characters! You can hop on the boat to it from Beach Club after your Character Breakfast at Cape May, or consider visiting on Saturday when the crowds won't be thick because there is no Magic Hours or Fantasmic showing according to the park calendar
here. (If you go to Disney Studios on Saturday, just bump your schedule all forward, going to Animal Kingdom on Sunday and Epcot Monday.)
Go to the water parks any day--just get there early so you can enjoy the slides without long lines!
As for the Pirate Cruise, it packs a lot of adventure into two hours and will create some fun memories for your son. Keep in mind that you won't go with him, however, he will be paired with another "buddy" who doesn't have a sibling or friend for the treasure hunt. It might be a good finale to the week if you book your breakfast at Lilo & Stitch's Breakfast at Ohana's early enough (you need at least 1 1/2 hours to eat) to then take the 10-minute monorail ride to the Grand Floridian for the cruise!
