I think upgrading from a 7 day Magic Your Way ticket with the Park Hopper option to an 8 day is a great idea. It won't be very expensive and more time to play equals more fun for your family. Plus, you won't have to choose between the 8th and the 15th because you can enjoy the theme parks on both dates. You can visit Animal Kingdom on the 8th and enjoy Extra Magic Hours that evening. Although there are no Extra Magic Hours on the 15th, you can visit your favorite theme park one last time and enjoy your favorite attractions before you leave.
