It sounds like you and your family have discovered a wonderful way to make the most of your Walt Disney World vacation by enjoying a split-stay experience! There are so many different types of accommodations to choose from, all conveniently located close to the magic of Disney's four amazing theme parks.
I've personally stayed at both the All-Star Resorts and
DoubleTree Suites by Hilton Orlando, and loved them both! The All-Star Resorts are considered part of the Disney Resorts Collection. While the Doubletree is considered "an official Walt Disney World Hotel", it is not part of the Disney Resorts Collection. Guests of the DoubleTree can still enjoy some of the services typically associated with Disney resorts, such as complimentary shuttle service and early park entry.
At this time,
Bell Services only provides luggage transfer between resorts that are within the
Disney Resorts Collection. If you won't have your vehicle with you and need help getting your luggage from the All-Star Resorts to the DoubleTree, it's only about a six-mile journey that would be a minimal cost from a rideshare company. Also, Bell Services at the All-Star Resort would be able to hold your luggage after checkout if you'd like to go explore the theme parks during the day. You can then come back and collect your bags when you're ready to check in at your second location.
