I’m delighted to hear you enjoyed the grub at
Roundup Rodeo BBQ. This rootin’-tootin’ restaurant sure knows how to bring the fun, but I get that the high-energy atmosphere, with all the hustle and bustle, can be a bit much for those with sensory issues. The “Andy's coming!” announcement is part of the immersive experience, and I understand how it can be a bit startling. Because the warning is spoken over the loudspeakers, there isn't necessarily a way to avoid it completely, but if you plan to dine here in the future, I recommend speaking with a Cast Member at check-in. They might be able to give you an idea of timing, (at what intervals the announcements are made so you can step out with your son, or at least provide a warning) and seat you as far away from the "action" as possible.
If you want similar food but a more subdued experience on your next vacation, mosey on by
Regal Eagle Smokehouse in
EPCOT. Bonus: this restaurant offers
Mobile Order! You'll find nearly everything you enjoyed in Andy's playroom, minus the delicious cheddar biscuits, unfortunately. I reckon you might miss those, so

Disney Parks Blog that could help you rustle up a batch at home.
Whispering Canyon Cafe at
Disney's Wilderness Lodge also offers hearty, family-style dishes similar to those at Roundup Rodeo BBQ, but the antics in this restaurant might also be problematic for your son. If this restaurant appeals to you, be sure to let your server know you'd rather not participate in them and that you'd like to be seated away from the center of the action.
