hi there we are looking to travel too disneyworld next year from australia but we are not wanting to come at peak times ect school holidays when is a good time

Peak crowds tend to descend on Walt Disney World during holiday periods, Lisa.  For Americans, those include: Easter in either late March or April, the week of Thanksgiving (the fourth Thursday in November), and about two weeks surrounding Christmas.  Less crowded, but still advisable to avoid, periods are summer months when kids are out of school, including mid-June through late August.  Other than that, there are some minor holidays in which long weekends will briefly drive up attendance.  Trying to avoid traveling around Presidents Day (the third weekend in February) as well as Memorial Day (the last weekend in May) will be ideal.  With those guidelines in mind, you should be able to avoid the most crowded times at Disney.  I hope that helps!
