Welcome to the Disney Parks Moms Panel, Morgan! There are a lot of things to do outside of the theme parks and I'm sure we can find some ideas that will work for your family!
If you are staying at a Walt Disney World Resort hotel, be sure to check out the activities that are offered there. Depending on the resort hotel, you may find that they offer games, crafts, tours, movies or other
fun things for you and your little ones to enjoy! And of course, don't forget about the pools. I've found many of the pools offer spots that are infant/toddler-friendly, and my kids want to spend hours there! (PS - don't forget the sunscreen!)
My family LOVES miniature golf and there are two locations on property:
Fantasia Gardens and Fairways Miniature Golf and
Winter Summerland Miniature Golf. We've played both courses, and I prefer the latter, just because I'm a Christmas fanatic! But my kids have a great time hitting the ball around, even if they don't actually understand the game yet!
You mentioned dining at Chef Mickey's (which is an excellent choice!), but there are also other
Character Dining locations outside of the theme parks. Cape May Cafe, Trattoria al Forno and 'Ohana all offer familiar faces at breakfast. Dinner at 1900 Park Fare is hosted by Cinderella and company. Mickey's Backyard BBQ is dinner, characters AND entertainment!

Disney Springs: Shopping, dining and entertainment galore - that is definitely my kind of day! I enjoy spending a full day here with my family!
