I am looking at booking a Candlelight Dining Package ADR for the Candlelight Processional in December. I have to choose from three different "showtimes", so am I correct to assume that the Candlelight Processional takes place three times each night?

Indeed, the Candlelight Processional at Epcot does take place three times each evening, Jamie.  All three shows are narrated by the same celebrity and feature the same choir performances.  In other words, all three shows are identical so it doesn't really matter which you choose, in that sense.  Here's a mom tip for you, though: if it were me, I'd book the first (5:00) show.  Because the show is performed in an open air theater, guests wandering around the World Showcase do get the privilege of listening in.  If you experience the first showing, the performance will be a surprise to you.  If you visit the second or third, chances are that you will have already heard a good portion of the show.  Whichever you choose, do enjoy; it's an amazing production!
