Hi Simone! I love this question because there really isn't a wrong answer. Both Resort hotels are fantastic!
Disney's Art of Animation Resort is fabulous! The Resort hotel is large with great photo opportunities throughout all of the themed areas, The Big Blue Pool is incredible (it will be closed for refurbishment beginning in fall 2020), and the quick service dining location,
Landscape of Flavors, has great options for fast casual dining.
For your family of adults, though, I might be inclined to select
Disney's Coronado Springs Resort. While the Resort hotel is undergoing refurbishments, it's beautiful and perfect for four adults traveling together. The dining options are amazing and really what puts this as my top choice for you.
Toledo - Tapas, Steak & Seafood is an incredible rooftop dining experience. You will have beautiful views while enjoying delicious tapas and incredible entrees. Save room for dessert as they are all amazing!
I also like Disney's Coronado Springs Resort because you will potentially have two queen beds in your Resort hotel room. There are a variety of room types at Disney's Art of Animation Resort, though, so I encourage you to check out all of your options.
I'm so excited for you! I know whatever you choose, you are going to make many magical memories!
Thanks so much for allowing the Disney Parks Moms Panel to be a small part of your vacation planning. Please let me know if you need any other information as you decide on your Resort hotel.
