We've gotten this question for the past two years since I've been on the panel, so know that you're not alone.
What I've seen is a pattern for Disney: the list of restaurants they include for the Disney Dining Plan that is released online in the fall for the following year typically
does not include many of the restaurants that Disney does not run. Those restaurants seem to be located at not only Coronado Springs Resort but also in Epcot and Downtown Disney.
However, by Spring, the online dining plan pdf is updated with the available restaurants, and for the past two years that I've been answering other guests' questions, these restaurants that were "missing" from the pdf dining plan in the fall on the website, show up come late February. I honestly I don't recall a major restaurant that has been dropped since I was on the panel.
Not that it's guaranteed, but I give it good odds that the restaurants that are currently on the dining plan for
Coronado Springs Resort (Cafe Rix, Pepper Market, Siestas Cantina, and Maya Grill) will be there when you plan to vacation next summer.
