Reservations are highly recommended at Disney's Restaurants. Sometimes (and only sometimes) you can snag a table by walking up to the podium; however, you may have to wait an hour or more for a table. I would suggest to keep calling 407-WDW-DINE or visiting online up to your departure date. You can also check during your vacation, too. Guests cancel their reservations all the time.
