While I'm sorry you have to work during your vacation, I cannot think of a more magical setting!
At this time, you are able to bring laptops into the theme parks. Keep in mind that all bags are searched prior to entry so you might want to consolidate as much as possible.
Depending on what theme park you will be in, there are plenty of great spots to sit, enjoy a beverage or snack and take care of your work. In particular, if you go at non peak meal times, you may be able to find a table in one of the
quick-service restaurants that is both quiet and comfortable. Provided it doesn't rain, it looks like your weather is going to be beautiful. You might even be able to find a nice bench and take care of your work while you enjoy the sights.
My husband had a similar experience a few years ago. While he didn't have to get on his computer, he did have to stop and hop on a conference call. We were at
Epcot at the time. He found a great spot in
Test Track. While he was on his call, the kiddos and I put our virtual concept car to the test. His call finished as we were reviewing the scoreboard to see how our car performed. It was perfect!
