I'm so sorry to be the bearer of bad news, especially when you've had such a lovely idea, but, unfortunately, it is not currently possible to purchase physical or eGift Disney Gift Cards, from here in the UK, which can be used as payment for food, merchandise etc. on arrival at Walt Disney World.
Although it's not quite the same, perhaps, you could consider purchasing a prepaid travel card or, getting some money changed into US dollars as a present, instead. I have done this for my children in the past and then ordered nice, personalised, Disney-themed money wallets from Etsy, to put the US dollars in.
