Yes, you are able to book just one
Lightning Lane Multi Pass experience instead of three if that is what you choose to do. While I do understand your reasoning behind this decision I wanted to provide some personal advice from using Lightning Lane Multi Pass earlier this month. If you are staying at a
Walt Disney World Resort or other select resorts you're able to book your Lightning Lane passes 7 days prior to your visit and for the length of your stay up to 14 days. If not, you are still able to purchase your selections 3 days before your visit.
Since you're able to reserve your experiences and arrival windows ahead, I recommend going ahead and selecting your top three selections at the time of purchase since you're paying for three and should have more availability ahead of your visit than the day of. On the day of your visit, once you redeem your first multi pass experience, you can then go in and modify your other two experiences to the next park (subject to availability.) This way, if it's a busier day, if your plans change or if there are only later arrival windows available at the second park you'll still be able to use your initial selections and won't miss out on opportunities or extra downtime between attractions. This method should still work as effectively as your plan, but also offers back-up experiences if your desired selections aren't available the day of.
