Hi William, sounds like your trip is so close you can touch it! Your little girl is in for the time of her life and one of the "Royal Rooms" at Port Orleans is going to be the icing on the cake. I recently toured those special rooms and you will be absolutely amazed at all the tiny details that went into each of them.
In regards to your other questions, I have some good news and some not so good news. I'll start with the good news. As of March 20, 2013, Splash Mountain reopened after an extensive refurbishment, so it will be all fresh and just like new for your visit. Some more great news is that Sofia the First and Doc McStuffins have joined the
Disney Junior - Live on Stage show at Hollywood Studios. This, too, was a very recent addition and I, personally, can't wait to see it with my little girl (also a Doc McStuffins fan) this summer.
Now, for the not so good news. The
Main Street Bakery which will be the Starbucks retailer in the Magic Kingdom is still closed for refurbishment. No official date has been announced for the opening.
As for recommendations for your 8-day stay, I would recommend choosing 3 top things you want to see or do each day and start with those. That way you don't miss one of your must-dos! Your daughter is sure to love the New Fantasyland and much of Magic Kingdom at her age. There are also lots of hidden gems like Rafiki's Planet Watch at Animal Kingdom or the Kidcot Fun Stops in Epcot! With that many days, take a breather in the middle of your stay with a day relaxing at the pool to recharge. Take time to enjoy watching her explore and not be so stressed that you don't enjoy every minute.
