    I just learned that I have celiac disease and we are three weeks from our trip, what can I do to make the trip easier to eat? We have all our reservations made.

    Oh my goodness, your trip is nearly here!  How incredibly exciting! Walt Disney World does a wonderful job accommodating Special Dietary Requests. Since your trip is close, I'd call Disney Dining at (407) WDW-DINE to ask them to include a notation of your special dietary requests on all of your reservations. If you dine at a counter service restaurant, you will want to make sure and request an allergy-friendly menu. 

    I also did a quick internet search for Visiting Walt Disney World with Celiac Disease and found many articles with hints and advice that you may want to look over prior to your trip.
