Dining around the Walt Disney World Resort is one of my favorite discussion topics and I'm happier than
Chef Remy in the kitchen to aide in your planning. First, to make Advanced Dining Reservations, the 60 days is calculated as actual number of days regardless of the change in months, so your 60 day window would have opened up at 5:45 AM on September 25th. Since that date has passed, I do hope you were able to secure some delicious options!
Douglass, since you'll be visiting over the Thanksgiving holiday I know sometimes popular restaurants are quickly unavailable. If you find yourself in this predicament, my best advice is to keep checking as frequently as you can. While there is no guarantee, guests' plans to change and sometimes you're able to find a last-minute reservation. Douglass, I wasn't able to book a table at the new Space 220 restaurant for my upcoming trip, but I'm still taking a minute to scan for availability in the hopes that something will pop up!
I'll also encourage you to extend your options beyond the parks to neighboring and convenient resorts. For example, from Magic Kingdom Park,
Disney's Contemporary Resort and
Disney's Grand Floridian Resort & Spa both offer quick access by the monorail or a walking path. If a mid-day break might be needed, you can coincide down time with a late lunch reservation at one of these properties and then head back into the park after your meal. While you do have an added travel time, on a busy day this can be a good option.
