The website will be very helpful to you in determining the activities geared towards your daughter. From the Attractions page, you'll find a filter for
Age Interest, for every Disney Park. Indicating your princess' age or even "all ages" will provide you the very long list of parades, attractions and live entertainment suited for your family. I definitely wouldn't miss New Fantasyland in Magic Kingdom, the newest addition to the Parks and by far the most magical new land in all the World!
To address your gluten intolerance, I can tell you with confidence Walt Disney World strives to accommodate guests with special diets and are frequently able to offer alternative menu selections.
I would suggest booking your Advanced Dining Reservations as early as possible, and indicate your intolerance on the reservation. You can do so online or by phone at 407-939-3463. I would also suggest contacting Special Diets directly at specialdiets@disneyworld.com to request a guest allergy/dietary request form. From my experience with allergies, the Cast Members have always successfully notated each reservation and a chef has personally addressed my questions tableside. At counter service locations, feel free to request an "ingredients book" as well as speak to a Cast Member regarding gluten free alternatives.
