What kind of shoes are required? I have heard that no open toed shoes or flip flops are allowed when riding the rides.

Casual is the norm at Walt Disney World. This includes sandals and flip flops. I've even seen people kick off their flip flops prior to fastening their seat belts on Soarin' in Epcot.

Shoes are required at all times. Otherwise, there are no footwear guidelines that I know of.  I've even seen plenty of women in high heel shoes. Their dedication to fashion is impressive. I would recommend wearing a good walking shoe and guarding against blisters.

While on vacation, wear what you feel most comfortable in and enjoy!
