After you dine at Victoria & Albert's, I like Kay's idea of renting a private watercraft to sail the Seven Seas Lagoon together. There's no better way to see the fireworks above Cinderella Castle! If the Grand One is out of your price range, though, keep in mind that smaller boats are available too. Call (407) WDW-PLAY to book a pontoon boat if you so desire. I sailed on one of these last June and it made for a marvelous evening.
My favorite way to enjoy a romantic evening near the Magic Kingdom, however, costs nothing at all. After dinner, ride a boat from Disney's Grand Floridian Resort to Disney's Polynesian Resort. Select a hammock or beach chairs with a clear view of Cinderella Castle. It gives me chills thinking about how romantic a spot this is! You and your lovely wife will have a gorgeous evening enjoying the Electrical Water Pageant and Wishes Nighttime Spectacular from this vantage point.
Then you could return to your Disney resort room where, if you call (407) WDW-GIFT in advance, the magic makers at
Disney Florist will leave rose petals strewn through your room and a bottle of bubbly for you to enjoy.
