I intend to purchase the Quick Service Dining plan but I would like to stay at the Coronado Resort and I do not see any dining service location for that resort part of the plan. Am I making a mistake?

Au contraire Kathleen!  Disney's Coronado Springs Resort does, in fact, have a quick service dining location, and it just so happens to be one of the most popular food courts on property.  You can use your quick service dining credits at the Pepper Market at Coronado Springs.  It is widely known for the variety of options available there, including Mexican food, a pizza kitchen, and even a grill kitchen where they serve both steak and carved roast.  The Pepper Market is unlike other quick service dining locations in that, there, you are given a ticket upon entering the seating area and you pay your tab as you exit instead of paying at the counter where you receive your food.

I've heard of lots of guests making a special trip to Coronado Springs for the sole purpose of using a counter service dining location at the Pepper Market; it's that good!  Cafe Rix (a waterside outdoor cafe) and Siestas Cantina (pool bar) are also located at Coronado Springs and do accept quick service dining plan credits.  Both serve light fare.  You may want to take a look at allears.net to get an idea of what's available on the menus.
