Disney's Caribbean Beach Resort is a wonderful, island-themed, moderate resort located in the Epcot area. I've stayed there with my family and it has a relaxing, laid-back vibe. If you are looking for a room that will be central to everything the resort offers, and since you aren't booked in a preferred room, I would suggest Aruba, buildings 44-46 or Jamaica, buildings 51-53. We stayed in Jamaica 51 and found it to be a fairly quick walk to the larger themed pool and Old Port Royale.
