My niece also has severe food allergies, and we take no chances with her. Fortunately, Disney restaurants and chefs go out of their way to provide amazing options for their Guests with food allergies, and our expectations for her have always been exceeded!
Some tips:
1) Always ask to speak to the chef, explain the allergies, and be specific.
2) You can ask to see the allergy/ingredient book, both at Table Service & Counter Service restaurants. Our rule, "If we can't read it, she can't eat it!".
3) Call ahead whenever possible to learn of options in advance: (407) WDW-DINE or (407)939-3463.
4) If you have one, carry your Epi-Pen with you. Make sure you let Park Security know that you have it with you when they perform baggage check upon Park entrance.
5) You are allowed to bring your own food into the Park. We take advantage of this often.
Disney Vacation Club (DVC) Resorts all offer villas with either full kitchens or kitchenettes (fridge, microwave). If those amenities are not available in your Resort, then check with a Cast Member who can direct you to a microwave to use when you bring your own meals. They cannot heat it for you, but can direct you to the equipment available for use and tell you how to work it. Refrigerators are also available for rental in most of the Resorts.
