Unfortunately they're pretty adamant at not allowing reservations beyond 180 days (and I've tried, even at the 181 day point, with no success :-)
I would just recommend trying to book 180 days out of the first day of your arrival. Although you may not be looking to reserve till later that week, they will allow you to reserve all your restaurants at the 180 day point of arrival.
And people's plans do change. So even if you don't see it 180 days out, I would check periodically leading up as people change times and days as their vacation day approaches.
