I'm trying to make character dining reservations. If a restaurant's hours are e.g. 7:30am to 12noon for breakfast, and they are offering a 11:40am reservation, will food stop being served at noon, the characters leave, and the restaurant close up?

Hi Janet! You will absolutely be served a full choice of the breakfast buffet or menu if you have a late reservation time. They need to put a cut off time for taking reservations so at some point they can change over to the dinner menu. Anyone accepted for a breakfast time will get the complete service of not only food but the character experience. You might be the last in the room but you will leave with every character's autograph and photo. The serving staff and chefs will not rush you and it can tend to be a quieter experience as the earlier diners all depart. I would definitely take the later time and if you want to keep checking back to see if anything comes up between now and your visit you can always cancel and accept the new time.

At Disney my dining motto is grab the reservation you can get and work it out later as dining spots go quickly!
