I did some investigating using the US Disney World site, and you are correct that the package is fully booked for June 1st and 2nd. This is an extremely popular offering, so booking right at the 60 day mark is of utmost importance. When I switched over to the UK version of the site, I did encounter the error message you mentioned in your question. Perhaps your location in the UK is what is preventing you from booking this ahead of time.
If you are unable to secure a reservation ahead of your visit, don't worry! You may still be able to dine at the restaurants and you can definitely use the standby queue for the show on your Hollywood Studios park day. While the benefit to the package is the fixed price and VIP seating, you may be able to save some money ordering à la carte from the menu. Additionally, you can still get a good seat toward the middle even without the package. On my February visit I was able to sit in the third row, basically dead center! Keep checking for
regular dining reservations at the locations that participate in the package, and don't forget that there can be walk-up availability if you can't score a reservation in advance.
I wish I could shoot fireworks from my fingertips and help you book this package, Annette! Check the site every so often for dining reservations and make sure you're in line early for the best seats (though I'd argue any seat in the Hollywood Hills Amphitheater is a good one!).
