Mid January is a great time to visit Walt Disney World. The weather typically is high 70s to low 80s. I was at Disney World four years ago during the first week of January when it was unseasonably cold. However, when I was at Disney World five years ago in early January, the weather was in the normal 70s and 80s. So it's always a good idea to dress in layers in case the weather changes unexpectedly. So don't over-pack, but I would definitely bring at least one pair of shorts, jeans, and a sweatshirt. Coming from New York, you'll likely find that it's not too cold to swim if the weather is in the high 70's or low 80's average. While there are no indoor pools or water parks at Disney World, all of the pools are heated year-round, so it's likely you will find opportunities, hopefully a lot, to swim. Enjoy your vacation.
