Hi Bradford.
Walt Disney World's Deluxe Resort Accommodations provide several options you can choose from, while keeping an 'upscale' experience combined with the relaxation of a quiet pool area in mind.
While all of the resorts at the Deluxe level of accommodation do attract families with children and boast a large 'feature' pool area complete with waterslide, several also do offer secluded, "quiet pools" tucked away from the resort's main hub of activity.
My personal top 3 suggestions in this category would be
Disney's Boardwalk Inn or
Yacht Club Resort, both located in the Epcot area of Walt Disney World, or
Disney's Polynesian Resort, located on the Magic Kingdom monorail line adjacent to Disney's Grand Floridian Resort. These particular resorts, in my opinion, offer great upscale amenities and are most conveniently located, while also featuring quiet areas in which to relax. All three of these recommended resort locations also offer great, upscale dining options within a short, walking distance or quick monorail ride.
You can view detailed, resort maps indicating the locations of these "quiet pools" at the allearsnet.com website; a fan site not affiliated with Walt Disney World. It's a great resource to assist you further in the making of your final decision.
