Sounds like you've been doing some awesome research and have some great idea. Here are a few more suggestions:
* Visit the resorts and check out the holiday displays. The Gingerbread House in the lobby of the Grand Floridian is amazing.
* Take an old-fashioned, horse-drawn wagon ride that offers a 45-minute scenic tour around Disney's Fort Wilderness Resort & Campground.
* Head over to the Tri-Circle-D Ranch at Disney's Fort Wilderness Resort & Campground. This is the home to Cinderella's Ponies and the majestic horses seen in Magic Kingdom Park. Here you can take a carriage ride or a pony ride (guests ages 2 and older and under 45 inches).
* Check out the activities at your resort. When you check in, they will include an information sheet in your Welcome Package.
* Rent a Surrey Bike. Kids love to sit in the front and kick back while the adults pedal.
* Some resorts offer fishing from their docks (poles are available)
* Go over to the Boardwalk area. In the evening they have street performers, food vendors, midway games and lots of live entertainment.
* Some resorts have Children Activity Centers. This is a good place for them to visit if you want to have a little free time.

Keep in mind that these are averages so it can vary. Right before your trip, check out the 10-day forecast at
www.weather.com. You can search the forecast for Disney World to see if there are any crazy weather patterns predicted during your visit. I think that if you visit the pool mid-afternoon, you'll likely be fine. When my boys get chilly, we jump in the hot tub for a minute to warm up.
