I have a great resource for you to view all menus ahead of time. Check out the independent site allears.net where every Walt Disney World Resort menu imaginable is listed for your planning needs. I, too, like to plan out my meals in advance, even the counter service locations. Once you're on the site, click, "Walt Disney World," then "Dining," then "Menus." I'm certain you'll find just the right location for all tastes. Walt Disney World understands the picky eaters in our families!
If you're planning to dine at table-service locations, you'll want to reserve them as early as 180-days prior to arrival, especially since you're traveling during the holiday week. By my records, your "booking" window opens on June 25th if arriving December 22nd. Are you staying at a Disney Resort Hotel? If so, you can book ten days worth of Advanced Dining Reservations on June 25th. I cannot stress enough the importance of booking these table-service reservations as early as you can. You can do so

The parade and fireworks times will be listed on the Times Guides available at the front of the Park. I'd also suggest downloading the My Disney Experience app to your smartphone to obtain this information, along with current attraction wait times and show times, character meet and greet locations and more.
