Advanced Dining Reservations. This is complicated for all international travelers due to our biannual time change with daylight savings time. Let's get to the details and get you some answers.
As you have noted Emmanuel, daylight savings time has ended recently here in the states and we "fall back" an hour, so instead of being 6 AM EST that day, it shifts backward to 5 AM EST. After doing a few internet searches, it looks that as of now, there may be a 14-hour difference between Orlando, Florida and Sydney, Australia. Make sure to double-check my math on that one! As long as the math is right, you would have to make your dining reservations at 10:00 PM your time, which would be 6:00 AM EST in Florida.
Since we are talking
dining reservations, I wanted to give you one tip when making your reservations to give you the best chance of getting all the ones you are looking for. The technical rule when it comes to dining reservations is 60-days from your day of arrival plus 10 days in the future. So if you arrive on a Monday, you will have the opportunity to make dining reservations 10 days from the 60-day mark. When making your reservations, try and save the reservations with higher popularity for later in the trip and try to make them first. This ensures that fewer people have access to these slots and greater availability for you!
