Whether you are on the early dinner seating or the late dinner seating, you won't miss the shows in the evenings. It really is a personal preference -- there will be an early show (for the late dinner seating), and there is a 2nd show later (for guests with early dinner seating). This allows all the guests to watch that evening's performance at the Theater every night, without skipping dinner.
My family has always enjoyed the 2nd dinner seating, mainly because, my kids doze off quick when too full in the evenings :-). So, we usually will watch the early show first, then head over to dinner at about 8:15 to enjoy our meal at our assigned dining room rotation. It has worked out for us these past several years. It is very easy to grab a
light snack on the deck, just in case you get close to feeling hungry in between meals.
Disney's Broadway-style musicals are a must see on the cruise! So, definitely do not miss any of them.
