I also have a 5 year old and 3 year old and we never visit Disney without a stroller! We have rented a double stroller and brought 2 umbrella strollers, depending on if we drove or flew.
For this age range, I would highly recommend having a stroller handy for both of children. It may seem like a challenge to keep up with the stroller, but when those cute little legs get tired and want to sit, it makes maneuvering through the parks so much easier, without having to carry them!
Just know there will be lots of family's with strollers, so be sure to tie something unique to your stroller to help you keep up with it when you park it! Disney Mom, Crystal, suggested to me once to tie a balloon to the stroller to help me find it in the sea of strollers in stroller parking!

rent a stroller, you can do that at the entrance of each park starting at $15/day.
Other stroller rental companies are available for stroller delivery to your resort as well.
