I'd love a recommendation for character dining. We have an 8yo son who wants to do this but has hit that "I'm too cool to tell you who I'd like to see" stage. There are too many choices!

Hi Deidre - Oh, I totally understand what you are going through.  There are so many character dining options at Walt Disney World, and it's hard to know what your kids are going to enjoy (especially if they won't tell you!).

Two of my favorite character dining locations are the Crystal Palace in the Magic Kingdom, and the Garden Grill in the Land Pavilion at Epcot.  The Crystal Palace offers a breakfast, lunch, and dinner buffet hosted by Winnie the Pooh, Piglet, Eeyore, and Tigger, while the Garden Grill offers dinner hosted by Chip and Dale (Mickey and Pluto are also in attendance).  Of the two, I prefer the Garden Grill, because the food is excellent (some is even grown right there in the Land Pavilion), and the restaurant rotates, making it appealing to older kids.

I hope that helps!  Have a great vacation!
