There are a number of activities that might be of interest to you. Since I love Disney Springs, I would first suggest that you consider making an advanced dining reservation at one of the fabulous restaurants at Disney Springs. New Year's Eve at Disney Springs.

Where to Watch New Year's Eve Fireworks at Walt Disney World Resort. Since I prefer to just spend time with family and/or small groups on New Year's Eve, I would suggest that you also consider a few low-key activities. If you book a concierge level room at one of the Walt Disney World Deluxe resort hotels, enjoy some time in the concierge level lounge and, if available, on the balcony. Or, book a room with a theme park view. We love Disney's Contemporary Resort - select a theme park view room and you could watch the fireworks from your balcony while recounting tales from the past year.
My husband and I can be silly, but we have created some great memories with Disney PhotoPass photographers. You could spend some time that evening taking various photos - dress with the New Year spirit and strike your best poses!
