Welcome back to the Disney Parks Moms Panel! Having traveled with extended family, I can certainly empathize with your dilemma, especially since we are always on a budget!
Personally, I would feel more comfortable with separate sleeping spaces. Although there are villas and suites that offer two or three bedrooms, these can often be beyond our budget. I suggest that you consider the amenities of Disney's Art of Animation Resort family suites (they have two bathrooms) or a one-bedroom suite or villa at a deluxe resort. Compare those prices and amenities to the prices and amenities of two separate rooms and then make a decision. Also, continue to check for
Walt Disney World Deals that may be applicable to the dates of your visit.
Your cousin may also want to bring a friend and, if so, having her own room would definitely give you all more space and privacy. As you make your plans, if you decide to do two separate standard rooms, be sure to compare prices at
value resort hotels,
moderate resort hotels and
deluxe and deluxe villa resort hotels. Having stayed in each different category of resort hotel, I can assure you that they are all quite lovely. My favorite value resort hotels are Disney's Pop Century Resort and Disney's All-Star Movies Resort - the Toy Story section is fantastic. My favorite moderate resort hotel is Disney's Port Orleans Resort - Riverside. And, my favorite deluxe resort hotel is Disney's Polynesian Village Resort.
