Disney Dream is my favorite ship and choosing a stateroom is one of my favorite steps in the planning process.
I'm not sure if your stateroom will be loud but I can tell you that my husband and I have experience staying below decks that are "happening" places throughout the ship and we did hear some noise. I do think your stateroom being above
Evolution, rather than below, is a positive, though! When my husband and I have stayed below high-traffic areas onboard, we were able to hear sounds above us. I'm not sure when you're setting sail, but if you have concerns regarding the location of your stateroom, perhaps you can give the agents at Disney Cruise Line a call at (800) 951-3532 to see if they're able to transfer you to a different location.
We've stayed in staterooms in the rear of the ship and did not find the motion of the ocean to be too much! On our 4-Night cruises, the first evening leaving Port Canaveral has typically been the time when we've felt the most movement of the ship. After that first night, you tend to get your "sea legs" and the ocean becomes more calm, as well.
Cody, I want you to have the best cruise imaginable! I wish I was able to give you a more definitive answer regarding hearing noise while in your stateroom located above the nightclub. If you are very concerned about it, call the agents at Disney Cruise Line and see if they're able to further assist you!
