Sounds like you might have a budding marine biologist on your hands! Hopefully I can provide you with the information you need regarding this exciting Port Adventure.
I've looked at the itinerary for the 5-night cruises, and I think the Port Adventure you're referring to is the
"Ultimate Trainer For A Day" at the Atlantis Resort in Nassau (There isn't a dolphin interaction Port Adventure at Castaway Cay). From what I can tell, most of the interaction with the animals is in waist-deep water, except for a small portion.
With the Trainer For A Day package, she'll be able to enjoy a "dolphin double dorsal tow", (the dolphins will swim as she holds onto their fins), as well as a "foot push" (the dolphins will push her through the water with their noses while she holds a paddle board above the surface). In the description, it says lifejackets will be provided, so I would think she could wear a life jacket for these activities. You may want to call Disney Cruise Line at 1-800-951-3532 to make sure that a non-swimmer would be allowed to participate in the deeper water activities.
