Wow! Your husband's conference sounds like the perfect way to sneak in a little family trip to Walt Disney World! Go for it!
My personal favorite resort that is located near Magic Kingdom is
Bay Lake Tower at Disney's Contemporary Resort. There are studios available as well as 1-, 2- and 3-bedroom villas. You might want to consider looking into a Theme Park View studio or villa, which provides your family with a fantastic view of Wishes Nighttime Spectacular right from your own private balcony. (The soundtrack of the spectacle is streamed right into your room through your TV, too, should you wish to tune in.) We've also enjoyed our Lake View, which is truly breathtaking at sunrise. :-) The villas come with fully-equipped kitchens which makes getting the kids a nice breakfast, lunch or dinner before / after some time in Magic Kingdom a breeze. You can pack lightly, too, because there is a washer and dryer right in your villa, and there is plenty of room for the rest of the family to stretch out and play while someone naps.There is a great pool with a slide, a kiddie pool as well, and shops and dining options are just steps away via the covered Sky Way Bridge, which connects Guests to the Contemporary. (Chef Mickey's is right there!) Finally, you can either take a 10-minute walk or ride the monorail to Magic Kingdom; both options are fantastic for families with a child asleep in a stroller. No need to disturb the little one in order to get home; you can simply wheel the stroller right up to the bedside and tuck the little one right into bed.
Disney's Grand Floridian Resort & Spa is right on the monorail line as well, so your husband's trip between resorts will be so convenient. You really can't beat Bay Lake Tower for its location and proximity to both the Grand Floridian and Magic Kingdom.
