Disney's Night of Joy is a long-running celebration of music and faith. The
lineup of events may be found online; that should help you and your husband plan out your travel strategy.
Typically, Disney does not release in advance what will be open that evening, but it is likely that you can count on the more popular rides and attractions to be in full force. In the past, the following attractions have been open:
Astro Orbiter; Buzz Lightyear's Space Ranger Spin; Space Mountain; Stitch's Great Escape!; Tomorrowland Speedway; Prince Charming Regal Carrousel; Dumbo the Flying Elephant; Mad Tea Party; Mickey's PhilharMagic; Peter Pan's Flight; Snow White's Scary Adventures; The Many Adventures of Winnie the Pooh; Haunted Mansion; Big Thunder Mountain Railroad; Splash Mountain; The Magic Carpets of Aladdin; Pirates of the Caribbean.
The following eateries are typically open during the event:
Cosmic Ray's Starlight Cafe; The Lunching Pad; Mrs. Potts' Cupboard; Sleepy Hollow; Westward Ho; Pecos Bill Tall Tale Inn and Cafe; Frontierland Turkey Wagon; Aloha Isle; Casey's Corner; Main Street Bakery; Plaza Ice Cream Parlor.
Unfortunately, I have been unable to pin down a reasonably comprehensive list of shops for you. At worst, the lineup of Main Street stores will be available, as will most of the standard shops - not the kiosks - throughout the Park.
