Wow, your husband and sons are going to be in for a really awesome surprise!
You have two main options to consider for
fishing at Walt Disney World: (1) Guided fishing excursions; or (2) Dockside fishing locations.
As far as the guided fishing excursions go, I recently treated my parents to one of these and they had a blast. I can't remember how many fish they caught in two hours, but it was WAY more than they usually catch when they go out on their boat for an entire day. The guide was a professional fisherman, so he gave them some awesome tips that helped kick their game up a notch.

As far as the dockside fishing options go, your guys can cast their lines at either Disney's Fort Wilderness Resort and Campground or at Disney's Port Orleans Resort - Riverside.
Now, on to the important question - the types of fish that are stocked in the lakes around Walt Disney World. While there are a wide variety of fish, I know that there are a substantial population of smallmouth and largemouth bass. In fact, there used to be huge B.A.S.S. tournaments held each year at Walt Disney World. (That should speak volumes about the quality of the fishing conditions!)
Here's a little tip from your buddy Derek:
If you opt for one of the fishing excursions, choose an early time slot. Just like the fishing conditions anywhere, the early bird gets the worm. However, this is definitely the case at Walt Disney World because of the number of boats that crisscross the waterways as the morning progresses.
