Hi there, Alec!
Welcome to the Disney Parks Moms Panel! We're glad you stopped by with your question!
I've stayed multiple times at Disney's Coronado Springs Resort, Disney's Port Orleans Resort - Riverside and Disney's Pop Century Resort and thoroughly enjoyed my experience at all three of these unique
Disney Resort hotels. In fact, I was able to stay in one of the recently refurbished rooms at Disney's Pop Century Resort last October and loved all of the enhancements. That being said, my recommendation would be Disney's Coronado Springs Resort based on the ages of your travel party and what you are looking for in a resort experience. Two girlfriends and I are visiting this fall and chose this Spanish-themed Disney Resort hotel for the exact same reasons. I've always found Disney's Coronado Springs Resort to be unique in that it features a lively atmosphere in a more upscale setting with fun recreational activities, amazing dining options and Guest Rooms with Southwest-themed decor and modern amenities throughout. Although I don't think you can go wrong with any of your choices, Disney's Coronado Springs Resort would be my pick for your upcoming vacation.
